Harrow's appearance doesn't startle him, but it does make a few things click in Sephiroth's mind. The farming comment makes more sense with this context, and then--

"This is your cavalier?"

He doesn't immediately seek to disengage (because what they're doing is hardly ridiculous, thank you), but he does shift back into a more defensive mode, keeping one eye on Harrow.
